Vintage Vollrath Stainless Steel Tray
When I was young I worked in the summer for my neighbor. He had several food trucks that did fairs and festivals.
He sold carnival food, he kept 2 of these at the far end of the griddle and put burgers, chops, sausages on it once they were cooked to keep them hot.
Usually, he would anticipate a rush at various times and have us get a little ahead.
Every once in a great while for some reason if the people didn't show, well we ate very good on those occasions.
This actually being part of another piece of the equipment, like a steam table or bottom trivet in a large pan. But that's what we used them for and it worked well.
